Organico speciality rice is grown and packed for us in Biancé in the heart of the century-old rice fields of the Northern Po valley.
Carnaroli rice is known as the ''king of risotti''. Carnaroli has a high content of amylase, giving a good absorption with little loss of starch. This means the rice absorbs the flavour of the ingredients and liquids better.
Preparation and Usage
Cooking time: 15-17 minutes
Risottos are not difficult to make. The main thing to remember is not to boil the rice separately. First for 250g of rice to serve 4-6 people, prepare a litre of bouillon or water in a jug. Next put 2-3 tablespoons of olive oil in a deep pan and shallow fry onions, garlic and your chosen vegetables - peppers, carrots, leeks, etc. Now Add the uncooked rice to the pan and stir. Slowly add the liquid from the jug, letting the rice expand and absorb the liquid until it taste-ready.
